  • 1 Tbs. olive oil
  • 1 lb. salmon, cut into pieces
  • 1 lime
  • 1/2 C. salt
  • 1/4 C. black pepper
  • 1/4 C. garlic powder
  • Couscous:
  • 2 C. vegetable stock
  • 1/2 tsp. salt
  • 2 tsp. butter
  • 1 1/2 C. couscous
  • 1/2 C. green onions, chopped
  • 1 C. tomatoes, diced

Preheat the oven to 350 degrees F. Place olive oil on baking pan with salmon. Squeeze juice out of lime over salmon. Season with salt, pepper and garlic powder. Wrap in foil. Bake for 25 to 30 minutes.

For couscous, mix vegetable stock, salt and butter in a saucepan over medium heat. Bring to a boil. Stir in couscous. Add remaining ingredients. Remove from heat. Cover and let stand for a few minutes before serving with salmon.
