  • 1 C. warm water
  • 1 (1/4-oz.) pkg. active dry yeast
  • 4 Tbs. sugar, divided
  • 2 C. bread flour
  • 2 C. all-purpose flour, divided
  • 1 1/2 tsp. salt
  • 1/2 C. oil
  • 1 large egg, lightly beaten
  • 2 tsp. vanilla extract
  • 1 C. brown sugar, firmly packed
  • 1 Tbs. ground cinnamon
  • 1/2 C. brown butter, melted
  • 2 Tbs. sugar
  • 2 C. confectioners' sugar
  • 1/2 C. heavy whipping cream
  • 3 Tbs. light corn syrup

To make the icing, whisk together the sugar and cream until smooth. Add in the corn syrup. Combine well. Cover and refrigerate until needed.

For the cinnamon rolls, combine 1 C. warm water, yeast, and 2 Tbs. sugar in a small bowl. Let it sit for 5 minutes. In a medium bowl, combine the bread flour, 1 C. all-purpose flour, 2 Tbs. sugar, and salt. Whisk to blend. In a stand mixer bowl, combine the yeast mixture, oil, egg, and vanilla. Gradually beat in the flour mixture. Add the remaining 1 C. flour to the bowl, beating to make a soft dough. Put the dough on a lightly floured surface and knead until smooth and elastic, approximately 3 to 5 minutes. Place the dough in a lightly greased bowl and lightly grease the dough. Cover and let stand in a warm place for 1 to 1 1/2 hours, or until it has doubled in size. Punch the dough down and cover. Let it stand for an additional 15 minutes.

Lightly grease a 10-in. cast iron skillet and set aside. In a small bowl, combine the brown sugar and cinnamon. On a lightly floured surface, roll the dough to an 18x10 in. rectangle. Brush the dough with the melted brown butter. sprinkle the dough with the bown sugar mixture, making sure to leave a 1 in. border on the outside of the dough. Tightly roll the dough into a jelly roll shape. Press the edges to seal. Cut the dough roll into 1 to 1 1/2 in. slices.

Place the dough cut side down in the greased skillet. Cover and let it rise in a warm place until the dough is doubled in size. It should take 1 hour. Heat the oven to 350 degrees. Bake the skillet for 25 to 30 minutes, or until the rolls are lightly browned. Drizzle the glaze over the top of the rolls.
