Baked Spicy Beef Chimichangas

Beef, green chilies, and a four cheese blend are wrapped up in flour tortillas and baked to perfection.

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 8 oz. mexican 4 cheese blend, divided
  • 1 can refried beans
  • 1 4.5 oz can chopped green chilies, drained
  • 1/2 c. picante sauce
  • 12 (8 inch) flour tortillas

Cook first 3 ingredients in until beef is no longer pink. Drain Stir in 1 1/2 C. cheese, refried beans, chilies, and picante sauce. Place 1/4 C. mixture just below center of each tortilla. Fold opposite sides of tortillas over filling, forming rectangles. Secure with toothpicks. Place on a baking sheet and coat chimichangas with cooking spray. Bake at 425F for 8 minutes; turn chimichangas over and bake 5 minutes more. Remove picks and serve immediately with remaining 1/2 C. cheese and other toppings (sour cream, salsa, guacamole, etc).
