Ingredients

  • 1/2 C. mayonnaise
  • 6 oz. cream cheese, room temperature
  • 3/4 C. red bell pepper, roasted and chopped
  • 2 jalapeno peppers, seeds and ribs removed, chopped fine
  • 8 oz. extra sharp cheddar cheese, grated
  • 8 oz. Pepper Jack cheese, grated
  • 1/3 C. scallions, minced
  • 1/3 C. fresh cilantro, minced
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. red pepper flakes
  • salt and pepper, to taste

Directions

Preheat the oven to 350 degrees and grease a 2-qt. baking dish.

In a bowl, mix together all the ingredients, reserving 1 Tbs. cheddar and Pepper Jack cheeses. Adjust the seasonings in the bowl to your tastes and pour the mixture into the prepared baking dish.

Top with the reserved cheeses and bake for 20 to 25 minutes, or until hot and bubbly. Garnish with extra cilantro.
