Baked Tofu Nuggets
- one 16-oz. tub extra-firm tofu
- 1 Tbs. olive oil
- 2 Tbs. cornmeal
- 2 Tbs. whole-wheat flour
- 1/2 tsp. seasoned salt
- 1 Tbs. nutritional yeast
- dipping sauce
Preheat oven to 425 degrees. Grease a nonstick baking sheet.
Cut tofu into 1/2-inch thick slices and blot well. Then cut crosswise to make 1/2-inch by 2-inch nuggets. In a mixing bowl, gently toss tofu with oil until evenly coated. Combine remaining ingredients in a freezer bag and shake to mix. Add tofu and shake until evenly coated.
Arrange a single layer in the prepared pan. Bake 15 minutes, then turn and bake another 10 minutes, or until golden. Serve with a dipping sauce of your choice.
