Baked Tomatoes

A wonderful tomato side dish, created for a last-minute dinner party and it went over so well! Goes particularly well with beef, ham and chicken dishes. Would also be good with fish entrees. Will be terrific in the summer when home-grown tomatoes are available, but also works well during the rest of the year. Can be multiplied as needed.

  • 12 thick slices tomato (about 4-5 medium tomatoes)
  • 1/2 5-oz. pkg. cheese and garlic croutons
  • 1 stick butter
  • 1/4 C. finely chopped onion
  • grated cheese

Preheat oven to 350 degrees. Butter a baking pan. Place tomato slices on the baking pan. Crush croutons and place in mixing bowl. Stir in onion. Melt butter and stir into croutons and onions until completely mixed. Cover tomatoes with crouton mixture. Sprinkle grated cheese over all. Bake for 30 minutes or until cheese is completely melted.
