Balsamic vinegar lends itself to so many recipes, but this balsamic dressing with basil really makes any salad sizzle. Not only can you use this dressing on your favorite greens, it can also be used to marinate chicken, fish or vegetables before grilling. The balsamic vinegar really brings out the best in the basil and makes this simple herb shine. While you can use a food processor, a mortar and pestle are the traditional way of grinding herbs to a paste and add a fun touch to a unique dressing.

  • 1/ 2 c. fresh basil
  • 4 cloves garlic, minced
  • 1/4 c. balsamic vinegar
  • 3 Tblsp. Parmesan cheese, grated
  • 3/4 c. olive oil
  • salt and pepper

In a mortar and pestle or small food processor, grind the garlic and basil together until they form a paste. Add the balsamic vinegar and Parmesan cheese and mix well. 

Whisk or process the basil paste as you drizzle olive oil slowly into the mixture. Whisk until the oil has completely disappeared into the basil paste. 

Season the dressing with salt and pepper to taste. 

Before serving, give the dressing a quick whisk to mix it again. Some of the oil may separate when left for too long.
