Balsamic Basil Salad Dressing
Serving Size / Yield
- 1/ 2 c. fresh basil
- 4 cloves garlic, minced
- 1/4 c. balsamic vinegar
- 3 Tblsp. Parmesan cheese, grated
- 3/4 c. olive oil
- salt and pepper
In a mortar and pestle or small food processor, grind the garlic and basil together until they form a paste. Add the balsamic vinegar and Parmesan cheese and mix well.
Whisk or process the basil paste as you drizzle olive oil slowly into the mixture. Whisk until the oil has completely disappeared into the basil paste.
Season the dressing with salt and pepper to taste.
Before serving, give the dressing a quick whisk to mix it again. Some of the oil may separate when left for too long.
