  • 4 thin boneless chicken breasts
  • 1 package of baby portabella mushrooms
  • 2 cloves of garlic, minced
  • 3 tablespoons of butter
  • ½ cup of balsamic vinegar
  • ½ cup of chicken stock
  • Salt and pepper, to taste

Heat butter over medium heat in a cast iron skillet; add garlic and sauté for a couple minutes. Add vinegar and chicken stock and bring to a boil. Place chicken breasts and mushrooms so they’re immersed in the liquid. Sprinkle with salt and pepper.
Place in the oven and bake for about 30 minutes, until the chicken is cooked through before getting dry.
Slice chicken and serve as a meal by itself for two, or serve over pasta or rice for up to four people to enjoy!
