Balsamic Chicken and Potatoes
Ingredients
- 1 cut-up chicken
- 4 to 5 medium potatoes, cut into chunks
- 1 medium onion, sliced thinly
- garlic to taste
- olive oil and balsamic vinegar
- fresh rosemary or thyme or your favorite seasonings
Directions
Place potatoes and onion and garlic and some of the seasonings in the bottom of a casserole. Drizzle oil and vinegar and mix well. Place chicken pieces on top and drizzle with oil and vinegar and add seasonings. Bake, covered, in 400 F oven for 45 minutes or until done.
