Balsamic Chicken and Potatoes

Balsamic vinegar and fresh herbs make this chicken dish light and delicious.

Ingredients

  • 1 cut-up chicken
  • 4 to 5 medium potatoes, cut into chunks
  • 1 medium onion, sliced thinly
  • garlic to taste
  • olive oil and balsamic vinegar
  • fresh rosemary or thyme or your favorite seasonings

Directions

Place potatoes and onion and garlic and some of the seasonings in the bottom of a casserole. Drizzle oil and vinegar and mix well. Place chicken pieces on top and drizzle with oil and vinegar and add seasonings. Bake, covered, in 400 F oven for 45 minutes or until done.
