Balsamic Chicken Italiano
Ingredients
- 4 chicken cutlets
- 1 sm. onion, sliced
- 1 clove garlic, grated
- 1 tsp. light oil
- 1 pinch oregano
- 1 sm. can sliced mushrooms
- 3 Tbs. balsamic vinegar
- 1 tsp. parsley
- 1/2 jar marinated artichoke hearts
- salt
- freshly ground pepper
Directions
Season chicken with salt and pepper. Saute chicken, onion and garlic in skillet with oil until almost golden. Add remaining ingredients and simmer until chicken is cooked through.
Serve over buttered noodles or orzo. Sprinkle with Parmesan cheese.
