Balsamic Green Beans and Potatoes

Using a balsamic vinaigrette is a great way to add flavor to your veggies!

Ingredients

  • 1 lb. green beans, trimmed
  • 1 Tbs. butter
  • 1 Tbs. olive oil
  • 2 shallots, minced
  • 1 C. baby Dutch yellow potatoes, cut into 1/2-inch pieces
  • 1 C. chicken broth
  • 2 Tbs. balsamic vinaigrette dressing
  • 1 Tbs. flour dissolved in 2 Tbs. hot water

Directions

Combine olive oil and butter in a skillet and heat over medium-high heat.  When butter melts, add shallots and potatoes and saute for 5 minutes.  Add broth, green beans, and vinaigrette, stir well, bring to a simmer, and turn heat to medium-low.  Cover for about 8 minutes.  Add flour paste to broth (move green beans out of the way) and stir quickly to form a thick sauce.  Cook for another 4 minutes and serve.
