Balsamic Green Beans and Potatoes
Ingredients
- 1 lb. green beans, trimmed
- 1 Tbs. butter
- 1 Tbs. olive oil
- 2 shallots, minced
- 1 C. baby Dutch yellow potatoes, cut into 1/2-inch pieces
- 1 C. chicken broth
- 2 Tbs. balsamic vinaigrette dressing
- 1 Tbs. flour dissolved in 2 Tbs. hot water
Directions
Combine olive oil and butter in a skillet and heat over medium-high heat. When butter melts, add shallots and potatoes and saute for 5 minutes. Add broth, green beans, and vinaigrette, stir well, bring to a simmer, and turn heat to medium-low. Cover for about 8 minutes. Add flour paste to broth (move green beans out of the way) and stir quickly to form a thick sauce. Cook for another 4 minutes and serve.
