Mushrooms are an ingredient that many people either really enjoy or really can not stand. There does not seem to be a middle ground when it comes to the fungus. This balsamic mushroom salad is sure to please the palate of the sophisticated taste bud. It may even add enough flavor to bring in some new fans.

  • 2 large garlic cloves, halved
  • 1/2 cup extra virgin olive oil
  • 1 pound small button mushrooms, halve the large ones to make them uniform in size
  • 1/4 cup Italian parsley
  • 1 teaspoon fresh thyme
  • 1 Tablespoon balsamic vinegar

Heat oil in a large skillet. Saute garlic until golden. Get rid of garlic, keep oil. Add the mushrooms and parsley. Saute until golden about 8 minutes. Reduce to low and add remaining ingredients. Cover and simmer together for 5 minutes. Season with salt and pepper. Cool, cover, and chill for up to 2 days.
