Balsamic Onions

Ingredients
- 6 med. red onions
- 6 Tbs. virgin olive oil
- 3 Tbs. balsamic vinegar
- salt
- pepper
Directions
Preheat oven to 375 degrees. Line a baking pan with foil. Wash the onions. Place them in the prepared pan. Baked them for 1 - 1 1/2 hours, until they are tender when pierced with a knife. Trim off the root ends of the onions and peel off the skin. Cut the onions into quarters and place them in a bowl. Add the oil, vinegar and salt and pepper to taste. Toss. Serve hot.
