Ingredients

  • 1 red onion, sliced
  • 1 sweet onion, quartered
  • 2 sweet potatoes, peeled and sliced
  • 1/2 butternut squash, peeled and diced
  • 8 oz. carrots, peeled
  • 1 head garlic, cloves separated
  • 1/4 C. olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 C. vegetable broth
  • 1/4 C. olive oil
  • 1/4 C. balsamic vinegar
  • 2 T. honey
  • 2 tsp. Dijon mustard
  • 1 tsp. lemon juice

Preheat your oven to 400°F. In a large bowl, toss together onions, potatoes, squash, carrots, and garlic with oil, salt, and pepper. Arrange on a large baking sheet in one layer. Bake for 40 minutes, turning once. In a small saucepan, combine remaining ingredients. Cook until mixture has reduced by half. Spread sauce over veggies. Continue roasting for another 10 minutes. Serve.
