  • 6 cloves garlic, minced
  • 1/4 C. plus 3 T. olive oil, divided
  • 1/4 C. balsamic vinegar
  • 1/2 C. dry red wine, divided
  • 2 T. fresh rosemary, chopped and divided
  • 3/4 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/2 lb. flat iron steak

In a small bowl, mix together garlic, 1/4 –cup of olive oil, vinegar, and 1/4-cup of red wine. Sprinkle with one tablespoon of rosemary, salt, and pepper. Pour marinade into a large ziplock bag with the steak. Gently shake to coat and refrigerate overnight. Pour marinade into a small saucepan. Add remaining red wine and rosemary and bring to a boil. Continue boiling for five minutes. Meanwhile, heat three tablespoons of olive oil in a large skillet over medium heat. Place marinated steak in the skillet and sear one side until brown. Flip and pour in boiled marinade. Reduce heat and let simmer for about 10 minutes. Transfer to a place, drizzle with remaining liquid, and slice to serve.
