  • 2 T. balsamic vinaigrette
  • ¼ tsp. salt
  • 1/8 tsp. pepper
  • ¼ C. roasted sunflower seeds
  • ¼ C. dried cranberries
  • 1 C. sweet potatoes, cubed
  • 3 C. mixed baby greens

Preheat the oven to 350 degrees. Place the cubed sweet potatoes into a baking pan. Drizzle the olive oil over the top. Sprinkle the salt and pepper. Bake for 25 minutes. Meanwhile, mix the remaining ingredients in a bowl. When the sweet potatoes are ready, let them cool. Combine the sweet potatoes with the mixed baby greens mixture.
