Two ingredients that are great to start your day with are bananas and almonds. The next time you have some bananas you need to use up, try using them in this delicious pancake recipe. Top them off with chopped almonds for a protein-packed crunch.

  • 1 ½ c flour
  • 2 T sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 small, ripe banana
  • 2 eggs
  • ½ tsp vanilla extract
  • 3 T butter
  • Sliced banana, for garnish
  • Sliced almonds, for garnish

In a mixing bowl, combine flour, baking powder, sugar, and salt. In a separate mixing bowl, mash the banana with a fork and set aside. Combine wet ingredients in another bowl, whisk together eggs, vanilla, and milk. Combine banana and melted butter with the dry ingredients until batter is just combined – do not over mix. The batter will be thick.

Heat butter a skillet over medium heat and pour about ¼ cup of batter in the skillet for each pancake. Cook pancakes for about two minutes on each side. Serve pancakes garnished with bananas and sliced almonds.
