This French breakfast dessert has banana cooked into the crepe batter and also features banana and bacon slices in the crepes for a fantastic combination of flavors!

  • 1 shredded banana
  • 2 sliced bananas
  • 1/3 cup flour
  • ¼ teaspoon salt
  • 2 tablespoons white sugar
  • 1 cup milk
  • 1 tablespoon melted butter
  • ½ teaspoon almond extract
  • 10 slices bacon

Whisk together the flour, eggs, salt, butter, sugar, almond extract, and milk for 1 minute or until smooth. Add the banana and mix before setting the bowl aside. Fry the bacon for 10 minutes in a skillet over medium-high heat and then drain on paper towels. Melt butter on a skillet over medium heat and then pour ¼ cup of the batter into the pan so that the bottom is evenly coated with a thin layer of batter. Cook for 3 minutes and then flip to cook the other side for about the same time. Transfer the crepe to a plate topped with parchment paper. Repeat with the rest of the batter. Assemble the crepes with banana slices and bacon slices and roll up the crepes.
