Banana and Ginger Tea Bread

Ingredients
- 1 1/2 C. self-raising flour
- 1 tsp. baking powder
- 3 Tbs. butter
- 1/3 C. dark muscovado sugar
- 1/3 C. drained stem ginger, chopped
- 4 Tbs. milk
- 2 ripe bananas
Directions
Preheat the oven to 350 degrees. Grease and line a 1 lb. loaf tin. Sift the flour and baking powder into a large mixing bowl. Rub the butter into the dry ingredients in the mixing bowl until the mixture resembles breadcrumbs. Stir in the sugar. Add the milk and chopped ginger. Mash the bananas and add to the contents of the bowl. Mix until soft dough is formed. Spoon into the prepared tin and bake for 40-45 minutes. Run a palette knife around the edges to loosen them, turn the tea bread on to a wire rack and leave to cool. Serve sliced, spread with butter Serves 6-8.
