  • 1 1⁄4 cups of all-purpose flour
  • 1⁄2 a cup of natural bran
  • 1 1⁄2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1⁄4 teaspoon of salt
  • 1 egg
  • 1⁄3 cup vegetable oil
  • 1⁄2 a cup of brown sugar
  • 1 cup of ripe mashed banana
  • 1⁄2 a cup of buttermilk
  • 3⁄4 cup of raisins
  • 1⁄3 cup of chopped walnuts

Line 12 muffin tins with paper liners.
In a bowl, whisk the flour, oats, bran, baking powder, baking soda and salt.
In another bowl, whisk the eggs, oil and brown sugar together.
In a small bowl mix together the mashed banana and buttermilk, then add it and mix it into the oil mixture to combine.
Make a well in the center of the flour mixture. Then add in the banana and oil mixture into the flour mixture; stirring only to combine. The gently stir in the raisins and nuts. Then divide the mixture evenly between prepared muffin cups (almost to the top).
Bake the batter for 20-22 minutes, or until the muffins tops spring back when lightly touched, and a toothpick comes out clean when inserted in the center of the muffin.
