Banana Bread Pudding with Chocolate

- 4 eggs, separated
- 2 C. heavy cream, scalded
- 6 thick slices banana bread, day old and cubed
- 1/2 C. chocolate chips
- 1/4 tsp. vanilla bean (or 1 Tbs. vanilla extract)
- 1 Tbs. maple syrup
- 1/2 C. sugar
Preheat your oven to 350 degrees. Soak bread in the hot heavy cream mixed with maple syrup. Allow to cool.
Mix the yolks with the sugar until they form a cream. In a separate bowl, beat the egg whites until they form stiff peaks. Fold gently into the main pudding along with the remaining ingredients.
Bake in a greased 8x12 baking dish for 45 minutes or until hot throughout. Serve warm.
