Banana bread is delicious and indulgent all on its own, but this easy semi-homemade recipe is perfect for people looking for something a little bit more decadent. Make sure you serve it with a glass of milk!

  • 4 eggs, separated
  • 2 C. heavy cream, scalded
  • 6 thick slices banana bread, day old and cubed
  • 1/2 C. chocolate chips
  • 1/4 tsp. vanilla bean (or 1 Tbs. vanilla extract)
  • 1 Tbs. maple syrup
  • 1/2 C. sugar

Preheat your oven to 350 degrees.  Soak bread in the hot heavy cream mixed with maple syrup. Allow to cool. 

Mix the yolks with the sugar until they form a cream. In a separate bowl, beat the egg whites until they form stiff peaks. Fold gently into the main pudding along with the remaining ingredients. 

Bake in a greased 8x12 baking dish for 45 minutes or until hot throughout. Serve warm.
