Ingredients

  • 1 C. shredded coconut
  • 1½ C. flour
  • ½ C. finely chopped walnuts
  • 1½ tsp. baking powder
  • ½ tsp. salt
  • 2 eggs
  • 1 C. sugar
  • ½ C. melted butter
  • ½ tsp. almond extract
  • 2 mashed bananas

Directions

Preheat over to 350 degrees Fahrenheit


Combine coconut, flour, walnuts, baking powder and salt in a large bowl


In a separate smaller bowl, whisk eggs until frothy


Add sugar, melted butter and almost extract and whisk


Add mashed bananas to the egg mixture


Pour the wet mixture into the large bowl of dry ingredients and combine.


Bake 15-20 minutes, or until golden brown


 


Serve with whip cream, sliced bananas, and coconut on top
