  • 1 1/2 C. graham cracker crumbs
  • 1/4 C. butter
  • 2 T. brown sugar
  • 2 squares bittersweet chocolate
  • 2 T. whipping cream
  • 3 C. skim milk
  • 3/4 C. sugar
  • 2 eggs
  • 1/2 C. flour
  • 4 bananas
  • 2 T. lemon juice
  • 1 C. heavy whipping cream
  • 1 tsp. coconut flakes

Preheat the oven to 375 degrees F. Meanwhile combine the graham-cracker crumbs with the butter and sugar in a bowl, and stir well. Transfer the mixture to a pie plate and let pie crust bake for about 8 minutes. To make the filling begin by melting the chocolate for about 5 minutes. Place it onto the graham-cracker crust. Let the chocolate cool for about 15 minutes. Now in a bowl mix together the sugar, eggs, and flour. Pour the hot milk in the bowl mixture, and stir well. Then transfer the mixture to the saucepan, once you remove it from the stove add the Irish whiskey. Let the mixture cool for 20 minutes. Before pouring the filling into the chocolate lining in the pie crust, lay banana slices on it. Finally, pour the filling over and chill the pie for at least 2 hours. Add whip cream to the top of the pie and drizzle some chocolate and coconut flakes to it.
