- 2 ripe bananas, mashed
- 1 C. whole-wheat pastry flour
- 1/2 C. dark raisins
- 1 C. low-fat milk, rice milk, or soy milk
- a pinch of cinnamon
- a pinch of nutmeg
- maple syrup or preserves
In a mixing bowl, combine all the ingredients except for the maple syrup and margarine. Stir until smooth. Add more milk to the mixture if it is too thick. Heat a griddle and coat it lightly with margarine. Drop 1/4 cups of batter onto the griddle. Cook over medium heat on both sides until golden brown. Serve hot with maple syrup and/or preserves.
