Banana Fritters

This is a fabulous Jamaican breakfast food that will get you jumping out of bed! It can also be served as a healthy dessert option.

  • 2 ripe bananas, mashed
  • 1 C. whole-wheat pastry flour
  • 1/2 C. dark raisins
  • 1 C. low-fat milk, rice milk, or soy milk
  • a pinch of cinnamon
  • a pinch of nutmeg
  • margarine
  • maple syrup or preserves

In a mixing bowl, combine all the ingredients except for the maple syrup and margarine.  Stir until smooth.  Add more milk to the mixture if it is too thick.  Heat a griddle and coat it lightly with margarine.  Drop 1/4 cups of batter onto the griddle.  Cook over medium heat on both sides until golden brown.  Serve hot with maple syrup and/or preserves.
