Banana Nut and Ginger Bread
Ingredients
- 2 C. brown sugar
- 1 C. mashed ripe bananas
- 2 eggs
- 1 tsp. vanilla extract
- 1 to 2 Tbs. oil, optional
- 3 C. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. allspice
- 1 Tbs. cardamom
- 1/2 tsp. ground cloves
- 2 C. dark beer
- 1 1/2 C. chopped walnuts
- all-purpose flour
- 2 C. dates, raisins, or currants
- 2 Tbs. finely minced ginger
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 in. loaf pans. In a large bowl, cream the brown sugar, banana, eggs, and vanilla. For moister bread, add oil, if desired. In a separate bowl, sift together the flour, baking soda, salt, cinnamon, all spice, cardamom, and cloves. Alternately blend the flour mixture and beer into the creamed mixture. Toss the walnuts with the flour. Stir in the walnuts, raisins,(or dates or currants) and ginger to the mixture and blend well. Pour into two greased 9x5 loaf pans. Bake in a 350 degree F (175 degrees C) oven for 1 hour, or until inserted toothpick emerges dry and clean.
