Ingredients

  • 2 eggs
  • 2 Tbs. vanilla
  • 1/2 C. butter or margarine, softened
  • 1/2 C. sugar
  • 1 C. brown sugar
  • 1 tsp. cinnamon
  • 2 sm. bananas, mashed
  • 1 C. pecans, chopped
  • 1 C. quick oats
  • 2 C. baking mix

Preheat oven to 350 degrees. Grease and flour loaf pan. Cream first 6 ingredients. Stir in bananas and pecans. Stir in quick oats and baking mix. Pour into loaf pan. Bake at 350 degrees for 50-55 minutes, until knife inserted in middle comes out clean. Let cool for 5-10 minutes. Invert pan over plate to remove loaf. Continue to cool for another 5-10 minutes. Slice and serve warm.
