This is an easy way to dress up a regular pound cake without too much of a to-do.

  • 1 pound cake mix
  • 1 C. mashed bananas
  • 2 eggs
  • 1/2 C. chopped nuts (if desired)

Preheat oven to 325 degrees. Do not follow pkg. directions. Combine mix, bananas and eggs, and beat for 3 minutes. Fold in nuts if desired. Bake in a 9 inch loaf pan (greased and floured) for 1 1/4 hours, or until cake is golden brown and springs back lightly when touched on top. Cool for 30 minutes on wire rack (cover with towel).
