Banana Pudding

A reader asked for this recipe. It is so much better than the instant banana pudding you keep showing. I hope more people will make this one and taste the difference.

Ingredients

  • 3/4 C. sugar
  • 3 Tbs. flour
  • 2 C. milk
  • Dash salt
  • 4 eggs
  • 1/2 tsp. vanilla
  • Nilla Wafers
  • 5-6 bananas

Directions

Combine 1/2 C. sugar, flour and salt in heavy sauce pan or double boiler. Mix in 1 whole egg and 3 egg yolks. Stir in milk. Cook stirring constantly until thickened. Remove from heat; add vanilla. Spread small amount of the pudding on bottom of a 1 1/2 quart casserole, cover with layer of wafers. Top with layer of sliced bananas. Pour about 1/3 pudding over bananas. Continue to layer wafers, bananas and pudding to make 3 layers, each ending with pudding.Beat 3 egg whites with the remaining sugarĀ until stiff peaks form and put over pudding, making sure to go all the way to the edge. Put under broiler until light brown. You may also use Cool Whip instead of egg whites. I usually double my recipe as everyone loves this pudding and I never have any leftovers.

  • This is so much better than instant or even the boxed cooked pudding mix. This what my mom made. It is so easy to make custard or pudding, I don't understand why folks buy the boxes. I make my own pudding when I make a Trifle for company also, the taste is so worth it.

  • THIS IS THE SAME RECIPE THAT I HAVE USED FOR YEARS. IT IS THE BEST, THERE IS NOTHING LEFT WHEN I MAKE IT.
