Bananas Foster

This fruity dessert is a classic Creole dish from down south. The smooth bananas mix with butter, cinnamon and rum topped with a scoop of vanilla ice cream.

Ingredients

  • 5 Tbs. liquid margarine
  • 1 C. firmly packed brown sugar
  • 6 small or 4 medium bananas
  • 1 tsp. cinnamon
  • 1/3 C. banana liqueur
  • 2/3 C. white rum
  • 6 scoops vanilla ice cream

Directions

In electric skillet, heat margarine on low (250 degrees); add sugar and stir until melted. Peel bananas, cut in half lengthwise, then cut again crosswise. Add bananas to skillet and cook for 2-3 minutes, turning to coat with mixture. Sprinkle with cinnamon, add banana liqueur and rum; ignite. Baste with warm sauce until flame burns out. Serve immediately over scoops of vanilla ice cream.
