Bananas foster is typically a breakfast menu item. We’ve taken this deliciously sweet breakfast and transformed it into a cheesecake. You won’t believe how incredibly tasty this recipe is until you try it.

  • 2 C Vanilla Wafers, finely crushed
  • ½ C Pecans, chopped
  • ¼ C Butter, melted
  • ¾ C Brown Sugar, packed & divided
  • 3 8-oz pkg Cream Cheese, room temperature
  • 2 tsp Rum Extract
  • 3 Eggs
  • ½ C Mashed Bananas
  • Topping:
  • 2 tbs Coconut Oil
  • ½ C Coconut Sugar
  • ¼ tsp Cinnamon
  • 2 Whole Bananas, sliced
  • 4 tbs Spiced Rum, divided

Begin by preheating your oven to 350 degrees. Combine the finely crushed wafers, chopped pecans, butter, and about ¼ cup of brown sugar in a large bowl. Stir well to combine until all ingredients are coated in the melted butter and are well combined. Press into a 13x90inch baking pan.

Next, combine the remaining amount of brown sugar with your cream cheese and rum extract in the bowl of your electric mixer. Beat on medium speed until the mixture is well combined. Add you eggs to the mixture, one at a time, making sure that each egg is completely incorporated before adding the next.

Stir your mashed banana into the cream cheese mixture and then pour into your prepared crust. Set in the oven to bake for 30 minutes or until the center is mostly set. Allow the pan to cool completely at room temperature before chilling for at least three hours or overnight.

Once you are ready to finish the cheesecake, make your topping. Heat the coconut oil in a large skillet over medium heat until the coconut milk has liquefied. Next, stir in your coconut sugar and cinnamon. Stir and cook until the sugar has completely dissolved.

Very carefully add two tablespoons of your spiced rum to the mixture. Add the sliced bananas and stir well to combine. Just before serving, stir in the remaining two tablespoons of spiced rum. Let cool slightly and then pour on top of your cheesecake.
