  • Crepes:
  • 1 ½ C All-Purpose Flour
  • 4 Eggs
  • 2 C Whole Milk
  • 3 tbs Extra-Virgin Olive Oil
  • A Pinch of Salt
  • Butter, for pan
  • Bananas Foster:
  • ½ Stick Butter
  • ½ C Dark Brown Sugar
  • 1 Cinnamon Stick
  • ¼ tsp Fresh Nutmeg, grated
  • 2 tsp Vanilla Extract
  • 4 Bananas, sliced
  • 1/3 C Dark Rum
  • A Pinch of Salt, to taste

Begin this recipe for bananas foster crepes by making your crepe batter. Pour your flour into a large mixing bowl and begin adding your eggs one at a time, making sure that each egg is fully incorporated before adding the next. Gradually whisk in your milk until fully incorporated. Drizzle in your olive oil and season with a pinch of salt. Whisk to combine and then let sit at room temperature for at least 10 minutes to one hour for best results.

Once you are ready to cook, make your bananas foster. Melt your butter in a medium skillet over medium heat. Add the brown sugar to the pan along with your cinnamon stick, freshly grated nutmeg, and vanilla extract. Let cook, stirring occasionally until the mixture thickens and caramelizes. Add your bananas to the pan and toss to coat. Finally, add the rum and allow it to flambé the bananas until the flames extinguish. This process might seem scary at first but I bet your kids will love it. Set over low heat while you make your crepes and keep a fire extinguisher handy.

Heat a small six-inch non-stick skillet over high heat. Once hot, add your butter and let melt. Adjust the heat to medium and then add about one and a half tablespoons of your batter into the pan. Swirl the pan to coat the bottom, allowing the batter to cook for just about one minute or until pale golden brown. Flip the crepe and let finish cooking for about five to 10 seconds on the other side. Remove from the pan and keep warm. Repeat this process with the remaining batter.
