This tender barbacoa beef is easily made in a slow cooker and will delight the whole family! Serve in warm tortillas, but you don’t need any other toppings for a flavorful taco.

  • 4 pounds cubed beef brisket
  • 3 chipotle chilis is adobo
  • 1 ¼ cups beef broth
  • ¼ cup lime juice
  • 2 tablespoons vegetable oil
  • 3 teaspoons minced garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Salt and pepper

Heat the oil in a large skillet over medium-high heat and sear the beef on both sides. Add the seared beef to the slow cooker. Blend the chilis, broth, garlic, cumin, oregano, and lime juice in a food processor and season with salt and pepper. Pour the puree over the meat and cook for 8 hours on low. Shred the meat with forks and serve.
