Barbecue Bacon Cheddar Meatloaf
- 5 lb. ground beef
- 1/2-1 lb. cooked bacon, crumbled or pieces
- 1 C. shredded cheddar cheese
- 2 eggs
- 1/2 C. Italian breadcrumbs
- 1 C. barbecue sauce
Preheat oven to 350 degrees. Mix ground beef, eggs and breadcrumbs together in large bowl until well blended. Take half of meat mixture and spread evenly in a loaf pan. Make a shallow tunnel in center of mixture pressing mixture slightly up on the sides of pan. Put bacon and cheese into the tunnel. Take remaining meat mixture and pack on top, making sure to press down on sides to seal stuff inside. Top with barbecue sauce. Bake at 350 for 45 minutes-1 hour.
TIP: Make sure bacon is well cooked and drained of all grease.
