Barbecue Chicken Pizza

Substituting barbecue sauce for red sauce is ingenious in this now-classic pizza.

Ingredients

  • 3 Tbs. solid shortening
  • 1 medium red onion, peeled and thinly sliced
  • 1 C. thinly sliced mushrooms
  • Salt and pepper, to taste
  • 1 1/2 C. cooked chicken breast, thinly sliced or shredded
  • 1/2 C. hickory-flavored barbecue sauce
  • 1 12" pre-baked pizza crust
  • 2 C. grated smoked gouda or shredded mozzarella cheese

Directions

Heat oven to 450 degrees. Cover baking sheet with heavy-duty aluminum foil. Heat shortening in large skillet on medium-high heat. Add onion and mushrooms to pan; season with salt and pepper. Sauté 3 minutes, or until onion is translucent. Remove pan from heat. Stir in cooked chicken and barbecue sauce. Place pizza crust on baking sheet. Arrange half of cheese on pizza crust; top with chicken mixture then remaining cheese. Bake at 450 degrees for 10-12 minutes, or until crust is crisp and cheese is melted. Let stand 3 minutes before cutting. Serve immediately.
