Barbecue Pulled Pork Sandwiches

Great for those cold rainy Northwest days when you need something hearty or for those days when you have a large group to feed. We used ours over hamburger buns. Tortillas would be just as good or even a heftier roll.

Ingredients

  • 2 lb. boneless pork tenderloin
  • 1 onion
  • 1 bell pepper, any variety
  • 2 C. barbecue sauce
  • 2 Tbs. A-1 sauce
  • 3 Tbs. chili powder (or less)
  • 1 Tbs. paprika

Directions

Lay boneless pork loin in crockpot. Cover with onion and red pepper sliced thinly. Mix in bowl: barbecue sauce of your choice, A-1 Sauce, chili powder, paprika and then spoon over all items in the crockpot. Cook on low 8-10 hours. When done, pull apart the pork loin with two forks until shredded.
