Barley, Beef, and Sweet Potato Stew

Ingredients
- 1-2 lb. beef stew meat
- 2 sweet potatoes, peeled and cubed
- 1 can diced tomatoes
- 1 medium yellow onion, diced
- 2 whole carrots, peeled and diced
- 2 Tbs. diced sun dried tomatoes
- 1 Tbs. garlic, minced
- 2 C. beef broth
- 1/2 C. marsala wine
- 1 tsp. pepper
- 1/2 Tbs. oregano
- 1 C. barley
- 2 Tbs. flour

Directions
Layer the vegetables in the bottom of the crockpot. Pour the broth and wine over them. Add the barley and mix until all the barley is covered in the liquid. Lay the beef over the top and add the spices. Cover and cook on low for 6 to 8 hours. 30 minutes before serving, add 2 Tbs. flour and mix thoroughly.
