Basic Refrigerator Cookies

This simple recipe is great on its own or can be the base for tons of other cookie ideas. Be creative!

Ingredients

  • 1/2 C. sugar
  • 1/2 C. firmly packed brown sugar
  • 2/3 C. margarine or butter, softened
  • 1 tsp. vanilla
  • 1 egg
  • 2 C. all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 C. finely chopped nuts (optional)

Directions

In large bowl, combine first 5 ingredients; blend well. Stir in flour, baking powder, and salt; blend well. Stir in nuts (optional). Divide dough in half on 2 sheets of waxed paper; shape each half into roll 1 1/2 inches in diameter. Wrap; chill until firm, about 2 hours. Heat oven to 425 degrees. Cut dough into 1/4 inch slices. Place 1 inch apart on greased cookie sheet. Bake at 425 degrees for 5-7 minutes or until light brown. Immediately remove from cookie sheet.

Notes: Cookie dough will keep up to 2 weeks in the fridge and up to 6 weeks in the freezer. Slice and bake frozen dough as directed above. Self rising flour is not recommended for this recipe.

Variations:

For Orange or Lemon cookies, add 1 Tbs. grated peel with flour.

For Spice cookies, add 1 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/4 to 1/2 tsp. cloves with flour.

For Coconut cookies, add 1 c. coconut with nuts (optional)

Yield: 60-72 cookies
