Batter Fried Chicken Chunks

Everyone loves fried chicken. Try this easy way to make it.

  • 3 whole chicken breasts
  • 1/2 C. flour
  • 1/2 tsp. baking powder
  • 1 egg
  • 1/2 C. milk
  • 2 Tbs. salad oil
  • Fat for frying
  • Maple syrup

Bone chicken breasts, remove skin. Cut each breast half into 6 to 8 chunks, about 1 1/2 inches square. Sift together flour, baking powder and salt. Beat eggs until fluffy, add milk and salad oil. Add dry ingredients; stir only enough to moisten. Dip chicken chunks into batter. Drop into deep fat heated to 340 to 350 degrees. Fry until golden on all sides and tender – about 5 minutes. Drain on absorbent paper. Serve hot with maple syrup – delightful for breakfast or brunch. For pan fried chicken, chunks may be dropped into 1/2 inch of hot fat in skillet. Turn to fry on both sides, until brown and tender.

Yield: 4 to 6 servings.

Note: Batter should be thick, but if it is extremely thick, stir in a small amount of milk.
