Batty Pecan Pie

Serve this pumpkin-pecan pie at Halloween or any autumn occasion.

Ingredients

  • 1- 9" piecrust,
  • 1 C. pumpkin
  • 1/2 C. Sugar,
  • 1 lg. egg,
  • 1 tsp. Pumpkin pie spice,
  • 2/3 C. light corn syrup,
  • 1/2 C. sugar,
  • 2 lg eggs
  • 3 Tbs. Butter,
  • 1/2 tsp. vanilla,
  • 1 C. pecan halves.

Directions

For the pumpkin layer, combine pumpkin, 1/3 C. sugar, one egg, and pumpkin spice in bowl. Stir well and spread over bottom of pie shell. For pecan layer, combine corn syrup, 1/2 C. sugar, eggs, butter, vanilla in same bowl. Stir in nuts and spoon over pumpkin layer. Bake at 350 degree for 50 minutes until knife comes out clean.
