Batty Pecan Pie
Ingredients
- 1- 9" piecrust,
- 1 C. pumpkin
- 1/2 C. Sugar,
- 1 lg. egg,
- 1 tsp. Pumpkin pie spice,
- 2/3 C. light corn syrup,
- 1/2 C. sugar,
- 2 lg eggs
- 3 Tbs. Butter,
- 1/2 tsp. vanilla,
- 1 C. pecan halves.
Directions
For the pumpkin layer, combine pumpkin, 1/3 C. sugar, one egg, and pumpkin spice in bowl. Stir well and spread over bottom of pie shell. For pecan layer, combine corn syrup, 1/2 C. sugar, eggs, butter, vanilla in same bowl. Stir in nuts and spoon over pumpkin layer. Bake at 350 degree for 50 minutes until knife comes out clean.
