BBQ Chicken Salad
Ingredients
- 8 oz. grilled chicken strips
- 1/3 C. barbecue sauce
- 1/2 C. canned corn, drained
- 1/3 C. chopped red peppers
- 1/4 C. diced red onion
- 1/2 C. shredded cheddar or Monterey Jack cheese
- 4 C. romaine lettuce
- Additional barbeque sauce, as desired
Directions
In a bowl, toss chicken with 1/3 C. barbeque sauce. On two large plates, place 2 C. of romaine lettuce on each. Divide remaining ingredients evenly between the plates and arrange on top of the lettuce. Top with the additional barbeque sauce as desired.
