BBQ Pork Chops and Rice

A colorful, very tasty and easy dish. This cooks in about an hour.

Ingredients

  • 4-6 thin bone-in pork chop
  • 1 sweet onion
  • 2 tomatoes
  • 1 lg. bell pepper - red, green, or yellow
  • 1 bottle favorite BBQ sauce

Directions

Preheat oven to 450 degrees. Brown chops in frying pan on both sides. Place in a medium to large baking pan. Cut tomato, onion and pepper in wedges and put over top of chops. Top with BBQ sauce. Cover with heavy duty foil. Bake for about 20 minutes at 450 degrees; then decrease heat to 350 degrees and cook for 40 minutes or until chops are fork tender. Serve over white rice or yellow rice.
