Ingredients

  • 1 lg. potato, finely diced
  • 1 carrot, finely diced
  • 1 C. diced tomatoes
  • 1 bay leaf
  • 4 C. Great Northern beans, canned and undrained
  • 1 C. barley
  • 2 C. cooked ham, finely diced
  • 6 C. water
  • 1 1/2 tsp. salt or to taste
  • 3/4 tsp. pepper or to taste

Directions

In a crock pot ,add potatoes, carrots, tomatoes, bay leaf, beans, barley, ham and water. Cook on high for 5 hours. Add salt and pepper and stir to combine. Discard bay leaf and serve.

Note: dry beans can be used if soaked over night. Make enough beans to make 4 cups and drain.

  • I don't have any barley in the house right now, so I might add some split peas in lieu of barley..... although I do wish I had the barley. You don't need a crock pot if you are going to be home. Just cook the soup slow for a few hours and you will know when it is ready.

  • Love this soup recipe! Made the soup with my husband who is not a "bean" lover but he thought it was great! We made a 'recipe and a half ' and didn't measure all the big ingredients so ours turned out a little thicker - and it was absolutely delicious! Yes, very filling and we will make this soup often! Thanks for a great recipe!

  • Mommala---You could just cook it in a big pot on the stove like you would any other homemade soup--you could also look up bean soup in a recipe book or even put it in your browser and just get the basic info for cooking on top of the stove and follow this recipe here for the ingredients! Hey--why not just buy a crockpot--they are very handy and you can buy them fairly cheap, esp. when they are on sale!

  • Would "love" to make this soup, as my husband "loves" beans & barley. But do not have a crock pot. So many recipes are coming through for crock pots - can't you add a little comment on how to just "cook" without one?

  • I would be sure and add a little vinegar--suppose to help cut down on the gassynous( or however you spell it!) Like the additions and changes submitted by ShellRez---I would also want some onion for sure! Are you sure that it didn't accidently get omitted from the original recipe?

  • Wonderful! I learned the hardway, however, to start the crock pot on high for the first two hours only, and then turn to low for the remaining time. For my particular crockpot, the full five hours was just too long, and scorched. Next time around, and there will be a next time, I plan to start out on high for 2 hours and and then on low, adding liquid as needed. This recipe was so good I took a pot of it to my neighbor who had surgery, and it made it easy for her family to prepare a meal. T

  • I added 1/2 chopped sweet onion, 1/2 C. chopped celery, 2 T. black lentils, 1/2 t. dried basil, 1 T. White wine vinegar, 2 cups water, 2 cups chicken broth & 2 cups beef broth. We garnished it with grated pecerino romano cheese. It was amazing! Makes a ton! Loved it!
