Ingredients

  • 1 C. red beans
  • 2 Tbs. olive oil
  • 1 lg. onion, chopped
  • 1/8 tsp. cinnamon
  • 1/2 lb. fresh pork rind
  • 1 ham bone
  • 1/8 lb. salt pork, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 6 C. water
  • 1 1/2 C. med. noodles
  • 2 Tbs. grated parmesan cheese

Directions

Put all ingredients except for noodles and cheese in a soup pan. Cover tightly and boil gently for 2 1/2 hours. Add noodles and cook for 8 more minutes. Sprinkle with cheese and serve.
