Bean and Noodle Soup

Ingredients
- 1 C. red beans
- 2 Tbs. olive oil
- 1 lg. onion, chopped
- 1/8 tsp. cinnamon
- 1/2 lb. fresh pork rind
- 1 ham bone
- 1/8 lb. salt pork, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 6 C. water
- 1 1/2 C. med. noodles
- 2 Tbs. grated parmesan cheese
Directions
Put all ingredients except for noodles and cheese in a soup pan. Cover tightly and boil gently for 2 1/2 hours. Add noodles and cook for 8 more minutes. Sprinkle with cheese and serve.
