A different take on the veggie burger - using beans instead! Try out this vegetarian-friendly recipe!

Ingredients

  • 2/3 C. bulgur wheat, uncooked
  • 1-1/3 C. boiling water
  • 1 Tbs. oil
  • 1 med. onion, diced
  • 2 garlic cloves, finely chopped
  • 2 C.. Scarlet Runner beans
  • 1/2 C. bread crumbs, dry
  • 1/4 C. whole wheat flour
  • 1/4 C. parsley, fresh and chopped
  • 2 Tbs. tomato paste
  • 1 Tbs. soy sauce
  • 1/2 - 1 tsp. oregano, dried
  • 1/2- 1 tsp. basil, dried
  • 1 lg. egg
  • salt and pepper to taste
  • 8 burger buns
  • condiments: cheese, ketchup, mustard, tomato, onions, pickles, lettuce, etc.

Directions

Cook Scarlet Runner beans according to package directions, drain and rinse. Combine the bulgur wheat and boiling water in a bowl. Cover the bowl and set aside to steam for 10 minutes. Heat the oil in a skillet, sauté onion and garlic until soft and golden. Combine the beans, bread crumbs, flour, parsley, tomato paste, soy sauce, spices, egg, salt and pepper in a food processor or blender and blend until fairly smooth.


Drain the bulgur of any excess water and mix into the burger mixture.


Form mixture into 8 burgers. Grill, broil or fry the burgers until browned on both sides.


Serve on buns with desired condiments.
