  • 3 tablespoons olive oil
  • 1 onion, diced
  • 6 cloves garlic, finely chopped
  • ¼ cup chili powder
  • ½ tablespoon ground cumin
  • 1½lbs ground beef or turkey
  • 1 teaspoon+ 1½ teaspoons salt
  • 14oz canned diced tomatoes
  • 14oz tomato paste
  • 2- 15oz cans kidney beans, drained an rinsed
  • cheddar cheese, shredded

Heat the oil in a large pan until shimmering. Add the onions and season with 1 teaspoon salt. Cook, stirring occasionally for 8 minutes. Add the garlic, chili powder and cumin. Stir until the vegetables are coated, cooking for 1 minute. Add the meat and 1½ teaspoon salt. Cook for 7-8 minutes, breaking up the meat into smaller chunks, until the meat is no longer pink. Pour into the crockpot and add tomatoes and their juices. Stir in the tomato paste and beans. Combine well and cover, cooking on high for 6 hours, or until thickened. When serving, top with cheddar cheese.
