  • 6 large sweet peppers. Two yellow, two red, and two green.
  • 1 cup fresh mozzarella, cubed
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced thin
  • ⅓ cup olive oil
  • ¼ cup balsamic vinegarette
  • 5 basil leaves, minced
  • 1 tbsp fresh oregano
  • 1 tbsp rosemary
  • 1 tbsp parsley
  • 1 clove garlic
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

First, broil your peppers until the skins blister. This should take about 5 minutes. Then, using tongs, rotate your peppers and continue to broil until it's entirely cooked. Then remove and cover them for 20 minutes.

Next, remove the burnt skin of the peppers and discard them. After that, remove stems and seeds, cut your peppers into strips and place in a bowl.

Whisk together the oil, vinegar, garlic, garlic salt, cayenne, pepper, and salt. Now you pour this mixture over your sliced peppers and toss. Cover and refrigerate for up to 4 hours. Then plate and serve.
