  • Filling:
  • 6 peaches
  • 2 T. Butter
  • 4 T. Brown Sugar
  • 1/2 tsp. Cinnamon
  • Crisp:
  • 1/2 C. Flour
  • 1/4 C. Oats
  • 1/3 C. Brown Sugar
  • 1/4 C. Sugar
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 4 T. chilled, cubed butter

To prepare the crisp topping, whisk together the flour, oats, brown sugar, sugar, salt, and cinnamon in a large bowl. Cut in the butter using a fork, or your hands, until the mixture is crumbly. To prepare the peaches, cut 1/4 inch off the top of 5 of the peaches. Remove the pits, and scoop out the flesh of each peach.Be sure to leave about 1/4 inch of the flesh still intact while hollowing out the peaches. Cut the flesh into pieces and put in a medium saucepan. Peal the last peach and cut it into wedges, dice, and put in the pan with the peach flesh. Add the butter, brown sugar, and cinnamon to the saucepan with the peaches and saute over medium heat for 5 minutes. Divide the mixture up between the five hollowed peaches, making sure to leave a little bit of space. Top each filled peach with the crumble mixture. Place the peaches on a lightly greased baking sheet and bake for 12 minutes at 400 degrees.
