Becky's Apple Nut Cake

A very moist cake with chunks of apples and nut pieces in it. Tastes delicious with cream cheese frosting. If you love traditional carrot cake, you'll love this too...and maybe even more!

Ingredients

  • 4 C. diced raw apples (golden delicious is best)
  • 1/2 C. oil
  • 2 C. sugar
  • 2 lg. eggs, slightly beaten
  • 2 tsp. cinnamon
  • 2 tsp. vanilla extract
  • 2 C. flour
  • 1 1/2 C. chopped walnuts
  • 1/2 tsp. salt
  • 2 tsp. baking soda

Directions

Mix apples, oil and sugar together. Add eggs and stir together. Mix in all the rest of the ingredients (with a large spoon rather than a mixer). Bake in a 9 X 13” greased pan, or make into cupcakes. Batter is very thick.

Bake in 350 degree oven for 45 minutes for cake; about 30 minutes for cupcakes.

Frost with cream cheese frosting.
