Beef and Barley Soup

We came from Michigan. I made this for my kids when it was cold outside years ago. They still love it today.

Ingredients

  • 1/2 lb. lean ground beef
  • 1/2 C. chopped onion
  • 1 garlic minced
  • 3/4 C. quick barley
  • 5 C. water
  • 1 14 1/2 oz. can diced tomatoes
  • 1/2 C. diced celery
  • 1/2 C. diced carrots
  • 1 can beef broth
  • 1 can mushroom soup
  • 2 beef bouillon cubes
  • 1/2 tsp. basil, crushed
  • 1 bay leaf
  • 1 Tbs. butter

Directions

Brown meat and set aside, then drain pan. Add onions, celery, carrots and butter and cook until soft. Add beef and remaining ingredients. Cook 1 hour. If it gets thick, add more water.
