The delicious beef and broccoli you order on friday nights can now be made at home! This beef and broccoli comes with a little zest of grapefruit, which brings a new taste to the beef.

  • 1lb boneless beef chuck roast, cut into bite size pieces
  • 1 cup beef consommé
  • ½ cup soy sauce
  • 1 teaspoon fresh grapefruit juice
  • 3 tablespoons grapefruit zest
  • 1/3 cup brown sugar
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 2 cups fresh broccoli, trimmed and chopped

Add the beef to the crockpot. In a small bowl, combine the soy sauce, consommé, sugar, oil, grapefruit juice, half of the zest and garlic. Mix well and then pour over the beef. Cover and cook on low for 6-8 hours, or until the meat is tender. After it is down cooking, mix in the cornstarch until smooth. Add the broccoli, stir, cover and cook for an additional 30 minutes on high. Serve topped with remaining zest.
